Mizuna

Mizuna literally means “water greens” in Japanese and has a slightly spicy flavour, although less than rocket.

It is used as the base for salads, soups or stir fries along with other plants and vegetables, or also as a garnish for meat dishes. Due to the high amount of water in the leaves, they shrink by around a half when heat is applied, so a generous amount is needed for stir fries, soups and cooked dishes.
