The unusual name reputedly comes from the lettuce’s resemblance to the size and shape of a lamb’s tongue. There was a time when it was somewhat disparaged, but today it’s highly appreciated for its delicacy, freshness and nutritional qualities.
Salads look great when lamb’s lettuce is added, thanks to its intense green colour, crisp leaves and tenderness.
